ANALYZING PATHOGENIC ESCHERICHIA COLI AND SALMONELLA SPECIES IN RAW MEAT AND OFFAL SAMPLES FROM MAGBORO, OGUN STATE

Abstract:

Escherichia coli and Salmonella represent significant foodborne pathogens responsible for causing severe illnesses in humans on a global scale. This study aimed to isolate, identify, and characterize pathogenic strains of E. coli and Salmonella from raw meat and offal samples obtained from various meat vendors in Magboro, Ogun State. A total of three samples were subjected to bacteriological isolation and identification, followed by molecular typing of the isolated bacteria. E. coli and Salmonella spp were isolated and identified through culturing on Eosin methylene blue agar, Sorbitol MacConkey agar, and Xylose Lysine Deoxycholate agar, respectively.

The total viable count in all samples was consistently high, measuring at 6 Log10 CFU/g, while the highest count of pathogenic E. coli reached 6.3 Log10 CFU/g. The E. coli isolates were confirmed as pathogenic through positive results in a 16S rRNA-based polymerase chain reaction (PCR). Notably, Salmonella species were detected in a 25 g sample of offal, which deviates from established meat safety standards.

The outcomes of this research project underscore the prevalence of microbial contamination and the presence of pathogenic bacteria in raw meat and offal sold within the Magboro market in Ogun State. These findings emphasize the importance of stringent food safety measures and highlight the need for improved handling and hygiene practices in the meat supply chain to safeguard public health.
